Sweet Seasoned Coppa – Paesanello

We carefully choose the larger cups with a good fat grain and a slightly longer cut than the average. Trimmed in all its parts, it is put in brine and at the end seasoned with very fine ground pepper. Bagging in natural gut and hand binding do that at the end of seasoning it presents those asperities and irregularities typical of a handmade product.
